After a long week of traveling and eating my amount of foods, I found myself looking forward to a large salad. This recipe is a re-invention of the salad at a restaurant I had back.

Remove the chicken from the oven and allow it to rest (while you prepare the salad) prior to chopping or cutting it up.

Create the dressing. Mix the oils together with the Dijon vinegar minced ginger, garlic and minced ginger together until it is smooth. Dress the dressing with salt and pepper as desired.

Prepare your Brussels sprouts. Add the shredded Brussels sprouts in a large mixing bowl. Sprinkle them with one tablespoon olive oil and a good pinch of salt. Rub the Brussels sprouts using clean hands until they are tender and soft.

Blend the salad. Add the rest of the ingredients for salad to the bowl. Stir into the dressing. The salad should be tossing until it’s evenly coated with dressing. After that, you can add the fried chicken and serve.
